Advance Food Prep - Week 1

This step is very important. When life gets busy, it's usually our diets that suffer first. To save time, we'll often opt out for processed foods or fast foods. To ensure your best chance for success this week, I strongly recommend you do the food prep below in advance:

Overnight Oatmeal The prep here is really quick and easy, but it does need to be made in advance, at least the night before you plan to enjoy it. In fact, we'll have overnight oats for breakfast twice this week, so if you want to make enough in advance for both Monday and Thursday, it'll keep fine in the fridge up to 5 days. For best convenience, store overnight oats as individual servings using glasses or bowls covered with lids (or plate(s)) to protect against refrigerator spills, etc.

Cinnamon Baked Apple This apple snack will be served 4 times during this week. Think about how many you want prepared. Once you have made these, you'll see how easy they are and you may want to wait to bake the ones for later in the week on a different day. It really depends on how much time you have during the week.

Zesty Italian Pasta Salad Prepare the pasta salad according to the recipe and chill in the fridge. If you work outside your home, you can go ahead and pack it for your lunch once you have it all mixed together.

Smokey Pinto Beans If you start your week on a Monday, you should sort and soak your beans on Saturday, then cook them on Sunday. If you're not able to watch over the beans, you can always throw everything into a crock pot and just let that do the work for you. Not everyone has a crockpot so I wanted to give both options. We offer both the stovetop and crockpot versions of the recipe.

Lemony, Garlicky Hummus Follow the hummus recipe and store in the refrigerator to allow the flavors to meld. As I mention above, if you work outside your home, you can put a serving of hummus in a container, prepare some veggies and you've got a great afternoon snack for your first day of the plan.

Cinnamon Maple Granola Follow the granola recipe and store so you have this ready to use as the topping for your baked apple snack.
