Advance Food Prep - Week 3

This step is very important. When life gets busy, it's usually our diets that suffer first. To save time, we'll often opt out for processed foods or fast foods. To ensure your best chance for success this week, I strongly recommend you do the food prep below in advance:

Bake Breakfast Casserole This recipe makes 8 servings. If you are cooking breakfast for more than 2 people, you may need to make this one again later in the week because we will serve it 4 times. You can also stretch the servings by adding a serving of fruit or toast with it.

Trail Mix Mix together your chosen ingredients; store in an airtight container and it's fine for the week.

Eggless Salad You'll get 6 servings easily if you're making sandwiches, and we're having eggless salad sandwiches 3 times this week. So if you're feeding 2 people, one recipe will be enough for the week.

Overnight Oatmeal The prep here is really quick and easy, but it does need to be made in advance, at least the night before you plan to enjoy it. In fact, we'll have overnight oats for breakfast twice this week, so if you want to make enough in advance for both Monday and Thursday, it'll keep fine in the fridge up to 5 days. For best convenience, store overnight oats as individual servings using glasses or bowls covered with lids (or plate(s)) to protect against refrigerator spills, etc.

Pasta Salad Prepare the pasta salad according the recipe and chill. If you work outside your home, you can go ahead and pack it for your lunch once you have it all mixed together. You'll be enjoying this dish on Tuesday.

3 Bean Salad You'll enjoy this yummy 3-bean salad for your lunch on Wednesday & Saturday. It'll save you time to make in advance and keep fine in the fridge till you're ready for it.

Lentils The lentils will be an ingredient in both the Barbecued Lentils and Lentil Loaf this week. Preparing a 1 pound bag of lentils will help make your prep time much quicker on the days we prepare those dishes. For advance prep, just keep spices to a minimum and follow the package directions for preparation.

Bake Chickpea Snacks Just prepare these according to the recipe. I typically get about 6 snack-size servings (approx 1/3 cup) out of one recipe.
