Don’t fall for the silly things people say about salads. They can be your most nutritious meal. And after you eat one of these types of salads, you will feel full and have energy to get through your afternoon. Here are some basics for a truly delicious salad.
Salad Ingredients:
2 cups kale* or spinach or romaine lettuce, washed and chopped
1 tablespoon dried fruit, such as raisins, cranberries, chopped apricot
2 tablespoons fresh fruit such as chopped-
apple, orange, strawberries
2 tablespoons chopped onion
2 tablespoons chopped carrots
1 tablespoon raw pumpkin seeds or sesame seeds
½ cup of canned garbanzo beans, rinsed and drained
Optional Ingredients:
2 tablespoons chopped broccoli/cauliflower
2 tablespoons chopped celery
2 tablespoons chopped cucumber
2 tablespoons chopped tempeh bacon*
¼ avocado, chopped
1 tablespoon chopped tomato
½ cup baked potato, cubed
Dressing Ingredients:
1 tablespoon extra virgin olive oil
2 tablespoons red wine vinegar or balsamic vinegar
A good pinch of herbs (basil, oregano are nice!)
1 teaspoon dijon mustard
Salt and pepper to taste
Add all ingredients to a small bowl, whisk and pour over your big, beautiful salad!
Good to Know:
If you are using kale, here’s a trick to soften it up and make it a little easier on your teeth. Before you add anything to the kale, put about a teaspoon of olive oil on the kale and salt it. Using your clean hands, “Massage” the kale so that it is evenly coated. Then start chopping the rest of your ingredients and add them to the bowl with the kale.
