New Orleans Style Red Beans & Rice with Garlic Bread


Ingredients:

2 lbs dry red beans

2 green bell peppers, chopped

2 medium onions, chopped

8 cloves garlic, minced

3 bouillon cubes (optional)

3 Tbsp Cajun Seasoning

1 tsp salt

pepper to taste




Directions:

Place pinto beans into a large pot and pour in enough water to cover by 2 to 3 inches. Let beans soak overnight.


Sauté onion and green bell pepper in a small amount of olive oil.  Cook until onions are translucent.  Add garlic and cook for an additional minute.


Drain beans, return to pot, and add cooked veggies, bouillon cubes.  Add cajun seasoning & pepper.  Bring to a boil, reduce heat to low, and simmer for 3 hours. Simmer until beans are soft, about 1 more hour


Good to know:

Red beans (including small red beans and dark red kidney beans) are a good source of iron, phosphorus and potassium. They're also an excellent low-fat source of clean protein and dietary fiber.
